apple bread.























We made this delicious apple bread from the always so lovely, Apples For Jam cookbook. It was moist with freshly shredded apples and had a divine nut and sugar crunch on top. Here is the recipe::

cake::
3/4 cup sugar
1/4 pound plus 3 tablespoons butter, softened
2 eggs
1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon ground cardamom
1/2 teaspoon ground cinnamon
salt
about 2 apples, peeled, cored, and coarsely grated
2/3 walnuts, lightly toasted and coarsely chopped
1 teaspoon vanilla extract

topping::
2/3 cup walnuts, finely chopped
1/3 cup lightly packed brown sugar
1 teaspoon ground cinnamon

Preheat oven to 350F. Butter and flour a 12 by 4-inch loaf pan. Beat together sugar and flour until fluffy. Add eggs, and beat them in well. Sift flour, baking soda and powder, cardamon, cinnamon and a pinch of salt and mix well. Add the apples, walnuts, vanilla and mix well again before scraping the batter into the prepared pan. For the topping, mix the walnuts, sugar and cinnamon and then scatter it onto the batter. Bake for 45 minutes or until the top is crusty and a cake tested inserted in the center of the cake comes out clean. Check the cake after it has been in the oven for 30 minutes and if the top is already browning cover it with foil.
Cool slightly and serve warm or at room temperature with cream or vanilla ice cream!
